Rib Eye, Spiced Baby Potatoes & Masala Butter

Description

With the festive season approaching  – This recipe is the perfect warm lunch to get the tummy grumbling.

Ingredients

6 x 200g rib eye steaks
600g masala butter
600 g baby potatoes
50g butter
1tsp ground cumin
1tsp smoked paprika
½ tsp cayenne pepper
60g rocket
25ml extra virgin olive oil
10ml good quality vinegar
MASALA BUTTER
500g unsalted butter
½ onion finely diced
3 cloves garlic finely chopped
4tblsp curry powder
10g flat leaf parsley
2tblsp lemon juice
3tblsp Worcestershire sauce
4 anchovy fillets
2tblsp baby capers
1tsp salt
1tsp pepper
10g basil
10g thyme

Directions

Boil the baby potatoes in salted water until they are soft, remove them from the heat and leave to cool. When the potatoes are cool enough to handle peel them, discarding the skins.

In a small saucepan heat the 50 g of butter, when the butter begins to foam add the dry spices and fry for 30 sec before adding the peeled potatoes.

Fry the potatoes just long enough to warm them through.

Then remove the potatoes from the heat and season with salt & pepper.

Drizzle the steak with a little oil and season with salt & pepper. Grill to the desired degree of doneness and rest.

Place the steak in the centre of the plate and place a dollop of masala butter on top. Dress the rocket with the oil and vinegar and arrange the salad next to the steak.

Serve with the warm spiced potatoes.

MASALA BUTTER

Fry the finely chopped onion & garlic in a little olive oil until soft and translucent.

Add the curry powder and fry for a couple of minutes. Place the onion mix with the rest of the ingredients into a blender and blend to a rough paste.

Add the butter and blend till evenly mix.

Season to taste
